Meatless Mondays: BBQ Meatballs & Mac & Cheese (Vegan)

There’s a certain comfort that macaroni & cheese brings, that you don’t have to miss out on if you’re removing dairy from your diet… or, if you would like to try something new. As I mentioned before, I was very skeptical about non-dairy cheeses, but Daiya has changed my mind completely! Yes, it’s from a box. And yes, it still tastes amazing.

As far as the BBQ “Meatballs”, I am a huge fan of Gardein. They have so many products that have made life much easier (and tastier) for me, as a Baby Vegetarian. This particular meal is easy to prepare, and it doesn’t take long. The work is already done for you!

Here’s what I used:

1 bag of Gardein’s Meatless Meatballs

1 box of Daiya’s dairy-free macaroni & cheese

Your favorite BBQ sauce

 

 

Here’s what I did:

  1. Preheat the oven to 450 and bake the meatballs for 18 minutes.
  2. Boil the macaroni in 2 cups of water and drain them when they are done (about 7 minutes).
  3. Add the cheese sauce and stir. Use pepper and salt to season.
  4. When the meatballs are done, use your favorite BBQ sauce to cover them.
  5. Enjoy!
