I haven’t always been a “breakfast” person. I would sometimes eat oatmeal or sausage biscuits. Many times I’ve eaten burgers, fried chicken, macaroni & cheese, pizza, cookies or nothing at all for breakfast. I could actually go weeks without eating anything for breakfast. When I decided to try a vegan/vegetarian diet, I had a genuine desire to eat healthier.
I found that I felt better throughout the day when I started my day with the right meals. And one of my favorite breakfast meals, are the oatmeal pancakes. They’re very easy to make and they still taste just as great the next day!
1/2 cup oats
4 Tblsp almond milk
1 Tblsp cinnamon
Blend all of the ingredients together. Pour them onto the heated griddle. It takes about 4-5 minutes for the pancakes to cook on each side.
